Cranberry Almond Granola Cookies for Christmas

With Christmas right around the corner, I have been a busy busy bee doing all sorts of "Christmassy" things. Shopping, cooking, baking, decorating, and sending out Christmas cards has become my part time job and I just love it! Christmas is a great time to try out some new recipes and make new memories and traditions. I usually bake a few cookies to give to friends and family and decided to give a new cookie a try this year. I have been only putting things that are better for you in my body since becoming pregnant and decided that I would try Cranberry Almond Granola Cookies this year for Christmas made with Quaker® Simply Granola purchased at Walmart. With a little bit of protein and a great crunch, they not only make a delicious treat but also make a great snack to get you through your day! Keep reading to see how I made these!



My idea for these cookies started out with a simple thought of making a no bake cookie. I knew I could put some delicious ingredients together and roll them into balls, stick them in the fridge, and be done! With all of the hustle and bustle of the holiday season I wanted to make sure that I wouldn't be spending a ton of time to accomplish this treat but wanted to make something satisfying that I could easily fill up a bag with.
With 34 grams of whole grains, the Quaker® Simply Granola, Oats, Honey & Almonds are not only a great ingredient in a recipe like this but also make a great snack or breakfast treat. With what I had left over, I ate with Greek yogurt or in a bowl with a bit of almond milk for breakfast! Check out the Quaker® Social Hub for more ideas!
Since I LOVE chocolate, I decided to add some mini chocolate chips to the recipe to add a little more sweetness. You seriously can't go wrong with chocolate and cranberries. I often find myself purchasing chocolate covered almonds as well which made m think that this was going to make the best combination!
I wrapped each of these bags with my favorite candy cane twine and cut a piece of fresh pine off of our tree to add to the bag. I plan on giving a few out at the office and sticking some in stockings as I did here! Check out the recipe below and let me know what you think!


INGREDIENTS


1 box Quaker® Simply Granola, Oats, Honey & Almond purchased at Walmart
1 cup chopped dried cranberries
1 cup mini chocolate chips
3/4 cup packed brown sugar
1/2 cup corn syrup
1/4 cup creamy peanut butter
1 teaspoon vanilla


DIRECTIONS


1. Line two large cookie sheets with parchment paper. In a large bowl mix granola, cranberries, and chocolate chips.

2. In a small saucepan, mix brown sugar, peanut butter, and corn syrup. Heat to boiling and stir continuously over medium-high heat. Boil and stir for one minute and mix in vanilla. Remove from heat.

3. Pour syrup mixture over granola mixture and stir until evenly coated. Place two table spoon rounded balls onto parchment paper and refrigerate for at least 30 minutes. Once hardened place into festive treat bags!
