Pina Colada Cupcakes

Pina Colada recipes and Pina Coladas to share with a great friend. Need I say more? Over the weekend I had the chance to create an original cupcake recipe with my great friend and wonderful baker, Judy! We had a great time spending the afternoon baking and chatting and sipping on some delicious Pina Coladas. This cupcake recipe was inspired by Wayfair's Cocktail to Cupcake campaign  and was sponsored by Wayfair! After our cupcakes were fully cooled we spent some time decorating them. We decided to make them look just like a pina colada with a taste white buttercream frosting, toasted coconut fakes, a maraschino cherry, and a pineapple chunk. They were picture perfect!
The drinks were so simple and contained the same ingredients as the cupcakes! All we did was throw all of our ingredients in the blender and blend. It was so fun creating these and they tasted even better!



3 Sticks Butter
2 Cups Sugar
4 Eggs
2 tsp vanilla extract
3 cups cake flour (you can use regular flour too)
1 tsp baking powder
½ tsp baking soda
½ cup coconut rum
½ cup cream de coco 
2 cups shredded coconut
¾ cups chopped pineapple 

1. Cream butter and sugar together until smooth
2. Beat in eggs and vanilla 
3. In a separate bowl mix together flour, baking soda, and baking powder
4. Mix together cream de coco and coconut rum
5. Turn mixer on low and slowly add flour and liquid mixtures alternatively until fully combined
6. Fold in coconut and pineapple 
7. Add to cupcake tins and bake at 325 for 20-25 min. 


3 sticks butter softened
1 8oz pkg of cream cheese softened 
6 cups powdered sugar
1 tablespoon vanilla
2 tablespoons cream de coco

1. Cream butter and cream cheese until light and fluffy; slowly add all the powdered sugar in small increments. 
2. Once the sugar is fully incorporated beat in vanilla and cream de coco. 
3. Put mixer on high and beat for an additional five min or until light and fluffy.
4. Garnish with toasted coconut, maraschino cherry, and pineapple chunk!



Ice cubes
1/2 cup rum
1/2 cup coconut cream
1/4 cup coconut milk
1/4 cup pineapple chunks
Sliced pineapple, for garnish, optional
Maraschino cherry, for garnish, optional


1. Fill blender halfway with ice cubes.
2. Add rum, coconut cream, coconut milk, and pineapple chunks.
3. Puree.
4. Serve, garnished with a slice of pineapple and maraschino cherry, if desired.
